Like his first book, Barbecue America, Rick Browne and his team have traveled across the United States and have compiled a variety of grilling recipes in Grilling America. You might ask, what is the difference between barbecuing and grilling. Barbecuing involves cooking over low heat for long periods of time. Grilling can be done more quickly and at higher temperatures. Most of us are grilling when we think we are barbecuing. That's your tidbit of knowledge for your next dinner party conversation!
The book not only has grilling recipes but it gives great tips on grilling. It discusses indirect versus direct grilling and how to start a fire the correct way in great detail. For example, Rick recommends putting your charcoal briquettes on half your grill and a foil pan with about one to two inches of water on the other side. This will insure your food stays moist
The recipes are very varied- this isn't just about meat. There are appetizer recipes, like martini oysters and dessert recipes, like barbecued ice cream; besides many meat and poultry recipes, which I found to be very original. I can't wait to whip out my charcoal barbecue next season!
