Salmon: A Cookbook

Nothing fishy here--this cookbook is a real catch.

These days we regularly hear about the benefits of adding more fish, especially salmon, to our diets. If we are going to eat more salmon, we’ll need more salmon recipes. That is where Diane Morgan’s “Salmon: A Cookbook” will come in handy, with recipes galore from appetizers to entrees, with stops along the way for soups, salads, and the like.

The recipes are laid out in straightforward fashion—each starting with a brief introductory comment, followed by a list of ingredients, and the preparation instructions. Most of the ingredients she uses, including lots of herbs and spice, should be available in a well stocked supermarket. The author also suggests wines to go with each dish, and adds occasional “cook’s notes” containing helpful hints, often about where to buy certain ingredients. Photographs by E. J. Armstrong add to the book’s appeal.

But we have more than recipes here. Morgan, the author of a number of previous cookbooks, is fascinated by salmon, how they live, the different types of salmon, fishing for them, and storing them. She writes about going out—as an observer—on a fishing boat in Alaska and visiting the Norwegian Wild Salmon Centre along the Laerdal River, Norway’s longest river.

For those of us who are not catching salmon ourselves, Morgan offers advice about what to look for when buying salmon. Top among her no-nos in this category—never shop in a store with a fishy smell, and don’t buy prepackaged fish. She shows how to scale salmon, but sensibly adds that whenever possible have the fish monger do it. She also discusses the health benefits of eating salmon. She expresses a personal preference for wild salmon, but says she sees the need for the farm bred variety—as long as they are of high quality. In sum, she answers just about every question a reader might have about the subject of salmon.
