Pies, one of the most popular desserts, come in many variations. Cream, chocolate, meats, nuts, and many other ingredients are used to create these sweet pastries. However, fruit pies are classic dishes that have a special taste that is sweet, tangy, and fresh.

Peach pie is one of the most enjoyed fruit varieties. During the summer months, when peaches are fresh, one can best enjoy this dessert. According to cdkitchen, Aug. 24 is National Peach Pie Day, which gives everyone a great reason to indulge in a huge wedge of this scrumptious dish with a scoop of vanilla ice cream on the side.

As explained by wiseGEEK, there are two main types of peaches: clingstone and freestone. Using freestone to make pie is simpler because the flesh of the peach falls away from the pit instead of clinging to it. Although the freestone peaches are not quite as sweet, they are juicer and larger.
