'Top Chef: Just Desserts' recap - 'Dessert in Disguise'

With the finale coming closer

There are only four contestants left and while they missed Carlos, they moved on. Sally and Orlando chatted about making friends; she knew that she moved around to succeed. Matthew admitted that he was an outcast in high school and he had an epiphany when he visited a restaurant that changed his ways.

The contestants arrived to the kitchen with Gail and Suzanne Goin. Gail announced that the contestants would go straight to the Elimination Challenge. The contestants would have to create a dessert inspired by a cuisine. The dessert would have to look like a disguised savory dish.

Chris - French
Orlando - Spanish
Matthew - Italian
Sally - Cuban

Gail announced that there were several savory dishes including Iron Chef Cat Cora. The contestants had three hours to cook and Sally didn't know anything about Cuban food. Chris was confused by French as well. Matthew decided to play on manicotti. Orlando thought of Spanish paella. He talked about how his life changed when he visited Spain.

Sally had two ideas so she joked around about to making both, and hoped that it looked better. After the commercial, Chris realized that he could do a beef wellington. Johnny arrived and he thought that Beef Wellington was English. Matthew was confident about his manicotti and decided to use actual tomatoes to give the dish some taste. Talking to Johnny, Orlando's paella turned out well; he talked about being intimidated by Chris. He realized that he grew after all the critiques. Sally was last and she had a defeatist mood. Sally still wasn't sure of what she was doing, but decided to make a Cuban sandwich.

With an hour left, Sally decided to solidify her decisions and went for the sandwich. Orlando was happy about his "fish" preparation. There was a lot of work getting done as time slowly ran out. Chris chose beef wellington because it was a dish he made for school and this dish represented his family and journey. With thirty minutes left, Matt decided to make a basil jelle. With time running out, the contestants finalized what they needed to do, helping each other out near the end.

At the apartment, Sally talked to her mother and she was motivated by the phone call. She grew closer to her mother as she grew older. The next day, Orlando talked to his mother, their relationship was better after he was disowned.

The contestants arrived and had two hours to cook. Sally decided that she had confidence and figured out her pickles. Chris decided to experiment with how his puff pastry element would work. He decided to use store bought puff pastry. Orlando decided to make saffron with coconut rice. Matthew decided to ditch his tomatoes and work on something safer. He decided to be very precise with his pasta and cakes. Chris was happy with his pastry molds. Sally felt intimidated, so she added plantain chips and a potato salad. Matt was asked to serve first and was excited to perform.

The judges and esteemed guests arrived to judging. Along with Cat Cora, the guests included Suzanne Goin, John Sedlar, and Sang Yoon. Matthew was first and the judges loved the correct flavors, but Hubert thought that halfway through the dish lacked complexity. Chris' beef wellington was justified by Johnny and Hubert. The judges loved that there was a great color transition and the dishes weren't overpowering. Orlando started to struggle with timing and just hoped everything ended up on the plate. While he was intimidated by Cat Cora, he presented the dish well. The rice was a bit broken even though the saffron was light. Suzanne didn't like the chorizo beet. Sally was last and she was nervous presenting her Cuban sandwich. As they bit into the sandwich, Sally's looked great, but some of the textures were off.

The contestants headed to the judges table, all of them standing in front of them. After some congratulations, Chris' critique was first. The photo was amazing, but he admitted that the puff pastry wasn't made by him. Cat loved the presentation of Matthew. Johnny wondered where the tomatoes disappeared to and he lost some creativity. Johnny appreciated Orlando's use of saffron and fruit. Hubert warned him that real paella didn't use fluffed rice. Orlando talked about editing himself and the judges didn't like that idea. Sally's dish had some of the best presentation, but the layers spread out when they chewed the dish.

Cat announced that the winner was Sally. She was followed by Chris. That left Orlando and Matthew as the bottom two. After the commercial break, Orlando was cut and Matthew became the final contestant to make it into the finale.
