KAMUT Khorasan Wheat

According to legend grains of Khorasan wheat were once found in the tomb of an ancient Egyptian Pharaoh, and that Noah carried the wheat on his ark.

Today you can enjoy this rich, nutty wheat that originated in Iran and Afghanistan with KAMUT.

KAMUT Brand Khorasan Wheat Soft Pretzel

Makes 12 to 15 large pretzels.
1 Tablespoon Active Dry Yeast
1 1/2 Cups Lukewarm Water
2 Eggs, Beaten
1/4 cup Oil of choice
1/4 Cup Sweetener of choice
3/4 Teaspoon Sea Salt
4 1/2 – 5 Cups KAMUT® Brand Khorasan Flour
1 Egg, Beaten
About 2 Tablespoons Coarse Salt

Preheat oven to 425 degrees. Lightly oil 2 large baking sheets. In a bowl, dissolve yeast in water. Blend in eggs and oil. Add sweetener, salt, and KAMUT® Brand khorasan wheat flour. Stir well to make a soft dough. Knead about 5 minutes, until dough is smooth. Roll dough into ropes about 1/2 inch in diameter and 18 to 24 inches long. Form into pretzels by placing ropes on baking sheets to form a circle and twist the ends twice. Lay the twisted ends of the dough across the circle and press to seal. Brush with beaten egg and sprinkle with salt. Bake immediately 12 - 15 minutes, until brown and crisp.

KAMUT Brand Khorasan Wheat Raisin Walnut Muffins

2 Cups KAMUT® Brand khorasan wheat flour
2 Tablespoons Baking Powder
1 Teaspoon Sea Salt
1 Teaspoon Cinnamon
3/4 Cups Buttermilk
2 Beaten Eggs
1/2 Cup Honey
1 Cup Raisins
1/2 Cup Oil
Topping Ingredients:
1/2 Cup Chopped Walnuts
1/4 Cup Brown Sugar
1/4 Cup Melted Butter
1/2 Cup KAMUT® Brand khorasan wheat flour

Mix the topping ingredients together in a small bowl and set aside. In a large bowl mix together all the dry ingredients then stir in raisins. Next add the wet ingredients (oil, eggs, honey and buttermilk). Stir well. Line muffin tins with baking cups or grease well. Fill the muffin cups of the way full with dough. Sprinkle one heaping Tablespoon of topping on each muffin. Bake at 350°F for 15-18 minutes. Muffins are done when tooth pick comes out clean.

KAMUT Brand Khorasan Wheat Pasta and Green Beans

1 Package KAMUT® Brand khorasan wheat pasta (spaghetti, fettucine, etc)
1 Teaspoon Sea Salt
1 Teaspoon Dried Minced Oregano
1 Teaspoon Dried Minced Basil
1 Teaspoon Celery Salt
1 Cup sliced cooked mushrooms (or 1 can of mushrooms)
2 Packages of frozen Italian Green Beans
1 Cup finely chopped Onion
1/4 cup oil of choice (canola, olive, etc)
Fresh Grated Parmesan Cheese

Cook pasta until tender, drain. Sauté onion in oil in a large skillet until tender. Add cooked pasta, green beans, mushrooms (drained), salt, celery salt, basil and oregano. Cover and simmer 10-15 minutes until beans are tender stirring occasionally. Top with cheese
