Given a choice, rum is one of my favorite drinks. Which is why I am a little embarrassed to admit that prior to reviewing Caliche Rum, I was not really sure what the difference was between light and dark rums (besides the color of course).

I now know that dark rums are usually aged - white typically are not. However, Caliche Rum actually uses a combination of four aged rums, including a solera process to make their unique blend of aged white rum. The result: a white rum that can actually be served on the rocks and tastes great. That is no easy feat!

While not a flavored rum, the notes of vanilla and caramel are evident from the first sniff. The taste is smooth, yet strong. To see how it held up in a cocktail I made a Cali Dacquiri (serves two). Modified from a recipe on the Caliche Rum website:

4 oz caliche rum
2 oz lime juice
2 strawberries
2 slices pineapple (or 2 oz pineapple juice)
1 /2 oz agave nectar
Handful of ice cubes

Blend until smooth - delicious, like, instantly transported to the beach delicious!
